Kokanee , Pink or Red meat?

I was recently fishing for Kokanee over in North Idaho. We caught a few Kokanee and some had pink meat and a few had very dark red meat. I am curious what the difference is ? North Idaho brookies

I hit my favorite secret stream in N. Idaho close to Sand Point and landed my limit of brookies all about 8-10 ". I must have realeased about 20 more. It was alot of work wading in the bushes, but know I have enough to smoke up a batch for family & friends.

Does anyone have a good spot in N. Idaho to go for panfish , fishing from the bank? When i go out in my uncles boat we hit Shepard for nice perch and a few crappie but alas I have no boat on my own. :chef: Any one have a killer brine for smoking trout. I smoked a few last year with soaking them overnight in 8 cups water 2 cups soy sauce 1/4 cup salt and 1 cup brown sugar. They were good but I want a little more sweetness and kick? I use a charcoal smoker.:chef:

Northport big sheep creek

I am curious if anyone has been up to Northport this season yet? I went once last June 07 and did ok. The ranger said it was unusually slow that year. SOMETIMES fish taste bad if not cleaned properly. Don't let them dry out on a stringer all day then take them home and expect good meat. I learned this the hard way as a child. FISH ON!!!:cyclopsan
