There have been a few possitive comments regarding pucks. I had recently began using wood pellets. So far I like them. They are nearly 2 1/2 times as dense as wood chips. Which is what I used exclusively before.

I considered pucks, but discovered pellets were a way better deal. I mean, if you look past the brand on the package. Your buying a type species of wood. In chip, chunk, puck, bisquette, or pellet.

So I am looking for the most wood for the money. Unless your restricted to a puck or pellet style smoker, then the door is wide open when it comes to chip, chunk or compressed wood offered in three different shapes.

Disclaimer: I discovered one smoker using the self feeding pellet delivery system. Will void the warranty if another brand of pellet, is used in there smoker.

Nope, have the same 4-rack you do only mine is the digital version. Get yourself a set of jerky racks or another set of the standard racks. If you have a lot of fish to smoke, then all you need to do is invert one rack over the other, load the bottom side of that rack (now the "top"), and slide them in the smoker. You can put 8 racks of fish in the smoker, I do it all the time. Try some cherry/alder, I think you might really like it. I tend to stay with milder wood flavors for fish, I think they work best, and reserve the stronger wood smoke flavors like hickory and mesquite for beef and pork. All that matters is if you like what you produce. [cool]

I tried the Salmon U recipe because so many swear by it. It was too much hassle for me, and although the fish tasted fine, IMO, they just weren't as good as the wet brine recipe. Since I'm smoking them for my use, I went back to the brine recipe I really like, not to mention the convenience factor.

If you shop around, you can get great deals on Bradley bisquettes. I buy mine here. They have accessories, parts, and good prices. Fast shipping too.
