Smoked Koke and bows?
So I scored myself some fish last Monday out of Spring Canyon.
Never smoked Kokanee, Wow, fantastic, the rainbow is great as well, but the kokes are like a well marbled ribeye, nice oily meat. WOW headed back this weekend in search of more.
But my question. I did a pretty basic dry brine, let them soak for about 36 hrs in the soup.
Smoked them last night, to pans of chips in the little chief, the the smoker covered in a box, then a large plastic bag cuz it was raining. The box was to create more heat, the bag to protect the box from the rain.
All worked well.
How long does smoked fish like this last in Tupperware in the refer?

Re: Smoked Koke and bows?
a week? Never lasts that long for me.
Try this recipe for tasty dip:
Take a couple of the fillets and blend them into 8 oz of neuchatel cheese (or whipped cream cheese, I try to go low fat option).
1 tbsp. minced garlic
1/2 lemon (I like my dip with a good tangy lemon taste)
some spicing, 1 tbsp. Grill Mates Mojito Lime
1-2 tbsp. water to smooth it out
3 stalks of green onion
Blend in food processor till uniform and refrigerate
Eat daily for lunch with cut baby carrots. Lose weight and improve your arteries and cholesterol. Live Longer (God willing)

Re: Smoked Koke and bows?
I was giving it the benefit of a week.
Re: Smoked Koke and bows?
I have had it as long as 3 weeks.
EDIT: Not vacuum packed. Using the brine and smoke is curing it. Depending on how much moisture is left in the fish will indicate how long it will last in the refrigerator.

Look for Wannafish A Lure on FaceBook
He said, “Throw your net on the right side of the boat and you will find some.” When they did, they were unable to haul the net in because of the large number of fish.

i carefully vacuum seal my smoked fish in small sizes and it lasts a month or more in the fridge. once i open a pack it last about a week, but its usually gone immediately.
