That skein looked pretty nasty when he first started with it. If it was fresh it would be a lot easier to deal with and taste better also. The best eggs are from well bled, saltwater caught chum salmon. I used to fish a lot with a couple of older (now no longer with us) Japanese gentlemen who really knew how to prepare, from start to finish, salmon eggs. Eating fish eggs is an acquired taste. I grew up in the Midwest and we ate fried perch eggs in season. Still do if they come out of a clean lake. Every year I take the eggs from a bright (not a nasty brown/purple Hoodsport type chum) saltwater chum and prepare them with just salt and ice water. In a mixed green salad with red onion, fresh mozzarella, slice cucumber, a little cracked black pepper, and a simple rice wine vinaigrette dressing is good. Also tossed with cold smoked salmon, cucumber, red onion, capers, fresh dill, and used as a topping for cream cheese covered crackers or toasted rounds is also very good.

That's neat. I like trying new things. So roe from salt fish is better than roe from river fish? How big a difference does it make quality wise?

Thanks for sharing. Its a pretty cool transformation how they go from the dark looking color packaged from the store to the bright orange at the end.

Sushi restaurants freeze any fish that come out of the river. The freezing kills the nasties that start to grow in fresh water. I know some folks (not restaurants) that do use river eggs but only from the freshest fish that still have live sea lice on them. I'm really picky and only eat salt water caught salmon.

Pickiness is a sign of being spoiled. Being "really picky" is a sign of old age [biggrin] And catching too many fish... =D>

That salmon egg salad recipe sounds darn interesting with all that good stuff thrown in. Maybe a little sun dried tomato with a little crumbled feta too?

I've seen tons of roe processed for consumption and never once seen fresh water used. Always 100% brine solution and in the end washed with 7%.
Looks like it works but then I've never been a big ikura fan. Enjoy guys!

Im with you Bodo Ikura was never my big thing either.I really like shad roe,carp roe, mullet roe. These are small eggs like caviar roe. Salmon roe exploding in my mouth just dosent grab me. You feeel the ploop pop pinging in my mouth which I dont like. Even perch eggs are good. I like my roe either fried or dried. Both are hevily salted. Its a treat for me not a steady diet thing. [unsure]

Well, I caught a bright coho in the estuary and kept the roe. I didn't eat it myself, but I gave it to my wife's Vietnamese boss and she liked it. With the chum coming soon, I think I may try to make some for myself. That's interesting about carp roe and the other species. Do you have to catch them close to the spawn or can you use the undeveloped roe? I've been fishing for the carp around my place lately and I know they are all post spawn now and haven't kept any.

If you're going to eat it yourself, what you want is the king row. Chum may be the most popular and in demand but the most expensive is from our favorite the king.
