Salmon BBQ
When barbecuing a salmon I put down a bed of lettuce leaves. I bbq the filet or steak on the lettuce which retains the natural oils and juices of the fish. It also keeps it from sticking to the grill. Banana leaves work best but any moist green leaf veggie works well. Just a FYI tip ...

That's good one, I'll have to try it. I usually just keep the temp on the grill down below sticking temp, oil the grill and cook skin side down only. Never had a problem sticking.

call me crazy but i stick 98% of my salmons in the smoker and give it away like candy at halloween..
got one of these last yr for doing a webpage for a friend. and then mastered my recipe, temp and timing.. not as fun as catching them but the praises are enjoyable..

My grandpa likes to make pico de gayo, put a piece of salmon fillet in aluminum foil with pico de gayo on top and wrap it all up in the aluminum foil and bbq it .

I normally put in tinfoil with some salted un-sweet butter and some of my other spices.
I tried direct to the grill and it got stuck and fell apart I will give your method a shot.

For actual smoking of fish I dont do the leaves. I dont do much smoking of fish. Too much salt/sugars for me. I BBQ my fish. I do put wood in the fire for flavoring. This method of leaves is for BBqing.

Hmm, I'm going to have to try the banana leaf thing too.
They're pretty tough and the darn things don't break down in the compost well (kinda like corn husks) so maybe you just gave me a good use for them for reuse after they're done with their primary 'banh tet' mission or 'cha'

What works for me when BBQing is to cut a raw potato in half and when the grill is warm, rub it down with the cut sides.

I have that smoker, the Masterbuilt Digital Electric. Works well.

My wife wraps pork covered in Achiote in banana leaves and cooks it in the pressure cooker. Never thought about using them on the BBQ - I WILL be trying that next time. Thanks Rac!
