Baked Halibut with Salsa and flaked toasted almonds

Go catch yourself a 20 pound halibut and filet it up...next, prep the meat by washing with cold water and pat drying. Once done, go ahead an add a little lemon juice to the top, evenly spread out. Next, either use your favorite salsa, or I prefer to make homemade salsa from scratch. Either way, spread salsa over the halibut filet(s) and then lightly dust with crushed almonds. Use a dicer and cut into small flakes. Spread this over the salsa and fire up that oven (or bbq) and cook until plump. Try not to over-cook as it makes the fish chewy. Serve up with asparagus and mashed garlic potatoes and you have one awesome meal! Enjoy! (you can just buy the halibut at the store too ;) but I prefer wild halibut).
