Beer batter recipe? Fish and chips?

Anyone got a good beer batter recipe? Or another way to fry fish?
I cook almost all of my fish on the BBQ. I love BBQ'ing and the product in the end. Tastes great. But I'm an amateur when it comes to deep frying. I had rockfish off the bbq for the past two days and so today I decided to try to beer batter the leftover rockfish fillets. I went with the poor mans method: Mix beer and Pancake mix. It was OK, definitely wished I had just BBQ'd it again, but then again, it never hurts to try new things out.
I hear some folks mentioning that just pancake mix and beer is one of the best beer batters, but then I Google search "beer batter" and come up with all sorts of different mixes. Anyone got a good, easy one?

1 cup flour
1 egg beaten
1 can(bottle beer) left out on the counter for a few hours to un-fizz a lil.
Mix together these ingredients add a pinch of salt and white pepper.Should be good to go.Its simple and an easy batter.only use enough beer to make the right consistancy.I prefer using a full bodied beer.
As a side note to frying fish.Fish will be crisper on the outside and juicier inside if the fish is fried while the fish is ice cold.I usually put mine in the freezer for 15 minutes or so to cool them down.

One thing that I got from Good Eats on Food TV is to dredge the fish in corn starch first before dipping it into the batter. This keeps the batter on the fish better. I haven't tried it yet (no good deep-fry-able fish lately
)

Sam,
send a PM to Beerman1981, the guy from Yakima. I swear that he was talking about (his) recipe for beer batter fish. Plus as you know he is a butcher, so I'm sure that he knows what he is doing in the kitchen.

Vidalia brand Batter mix use beer instead of water.

Just go to safeway and grab umm..I think it is McCormick® Beer Batter . Also, I love hush puppies with fish. So grab the McCormick hush puppy mix also. YUMM

I searched through the archives of the Culinary Section and I believe I checked his recipe somewhere back there. I'll have to shoot him a PM. I just wanted to throw a new topic up here cause we have a lot more and much different members around now then we did a year ago.....Was looking to get new ideas...

ive allways wanted to try frying fish with olive oil and putting lemon drops on it.i saw that on the cooking chanel one day
