Has anybody done these on the smoker? I made some this past weekend. I'm talking about stuffed jalapenos.
Basicly you core out the seeds and membranes from large jalapeno peppers... I then stuff with a mixture of cream cheese and chorizo sausage. stuff that in the pepper and then wrap the pepper in either bacon or pruschetto (sp?)
I smoked it over Hickory for about 2 hours.
If the peppers are cored out properly they will not be out of control hot, most people can eat them fine. An awesome appetizer. If anyone has used other things in the stuffing, please pass this along.:chef:
