Bisquick as breading for frying

I was by a put and take lake earlier today while exploring another lake, ended up getting one small fish and wanted to make a sandwhich. i read on here that bisquick makes good breading so i tried it out, it makes very good breading. the one thing i need to remember is to not overcook them. by the way, there seemed to be a ton of oil that ended up in the breading itself, anybody know why that is? its more oil than should be in there.

Was it fresh oil? I use a deep fyer alot and I noticed that the oil goes into the batter or breading when it gets older.
Did you use it as a wet batter or a dry coating? I have experenced more oil saturation in batter than when I use egg dip them dredge it in a dry mixture.
I have used bisquick before but not 100%. I mixed it with cornmeal or something else.

i was using fresh crisco and just mixed the bisquick with water as batter. i heated it up til right as it started to smoke then put the fish in. i wasnt completely submerging them as i was using maybe a half inch layer of oil in a cast iron pan, could only being half submerged be the problem?

I don't know. I have food that floats on the top in the oil of the deep fryer and then I have to turn it but I don't recall it being too oily.
Did you use oil or shorting?
Maybe the overcooking did it.
Test-go catch some more...try again. Try dipping it in egg them dredging it in in the Bisquick. Cook but not overdone. Also do one in the batter mixture see the difference.

on good eats he was saying as long as there is water inside then the steam should push the oil out, which i guess over cooking might defeat. i think i should follow his instructions more next time.
