Dinner tomorrow. What Seasoning?

Post by Lotech Joe » Sat Nov 06, 2010 5:14 pm

I'm doing dinner tomorrow and I'm sorry for the short notice. But, here's my question;
Meat; Marinated & Sauteed Salmon in butter, onion, orange juice & dill.
Starch; Zaterain's New Orleans rice pilaf.
Veggie; Steamed Swiss chard with a dollop of acorn squash in the middle.
My question is; What seasoning would you use for the veggie? I'm thinking Cummin or Sage.
What are your thoughts?

My own preference is alittle nutmeg for the veggie. I also put that in potatoes and it makes quite a difference.

Nutmeg. Awesome. Hadn't thought of that one. Great idea. Maybe with just of hint of Cinnamon & Brown Sugar?
Thanks,

I know this is late, but when I still had the time for a garden and grew chard, I liked it rinsed, into the pan with just the water on the leaves, cover and heat until wilted, direct to the plate with some butter, salt & pepper to taste, and then sprinkled with a good quality Balsamic vinegar. That works just as good with spinach too! YUM! [cool]

Im with Hewes . Balsamic vinager added at the last moment of cooking chard will be good.Maybe some toasted sesame seed as a garnish.

When we eat chard, we serve it just like Hewesfisher. This time I'm putting a dollop of acorn squash on a bed of chard. I think that nutmeg will set it off just right.

Wow, you guys make me hungry and I just ate about an hour ago LOL. I wouldn't know what to put with it. Glad I married a great chef:cheers:

Well??? Lotech how was dinner? I saw really nice Chard at Carpinitos yesterday and bought a few bunches at a buck a bunch. I usually dont eat alot of Chard or Spinach because of Vitamin K. I 'll up my dose of Warfarin to enjoy the Spinach and Chard.

Dinner was a failure. I thought it was really delicious but the wife didn't like it. Not every endeavor is a success.

Nice Blog Joe.Its like that sometimes. It also depends on the pallets eating your food. So many of my friends are not adventursome when it comes to eating. If it isnt meat and potatoes they arent eating. There are no real failures. Its a learning session. Everytime I put out a feast its a challenge.Better luck next time.

Thanks for the encouragement racfish. I really enjoy cooking, especially in camp. But, I hate cleaning up the mess. I guess that marks me as a "wannabe-chef." :chef:

Cleaning the mess !!!! We all hate that part.Emeril,Bobby Flay,Brefoot Cuntessa, They all have clean-up crews. We dont have that luxury. When I make jams and jellies its unbelievable the mess that needs cleaning. Before hand I bathe all my equipment in a Iodine solution to kill germs.Thats why in the Bible ,all the guys had a wife and had "Handmaidens".
