Bacon wrapped elk tenderloin

Ok, it isn't fish, but it was so good I wanted to share.
Made this last night using a 1lb chunk of tenderloin from last season's elk. The wife and kids ate it up like dessert. No leftovers. Served with a good cabernet sauvignon....wow. Frankly, I didn't expect to like it that much. Thought it would be too sweet, but it was a winner.

Sounds really good! I use a soy/garlic/ginger/brown sugar marinade on game that is a bit "gamey". It gives a great flavor and masks overly strong game taste/smell. An overnight soak in milk also helps.

Oh yes. elk is delicious. Bacon is delicious. Bacon wrapped anything is spectacular. When I was a kid, my neighbors had pigs. They were awesome, they came when they were called and we played with them. And then we had bacon. For ages, and it was good. And our bacon had a name. Some of it was named Bart, and some was Bessie, and some of it was mean and so it didn't get a name. I've had this recipe, and varieties of it and can attest to its deliciousness.

Good to know. We never used much on our game besides the basic seasonings on our game. Since I like elk, I thought I'd be doing it an injustice, but this sounds like a good way to introduce some flavor and downplay any negatives that might also make it more enjoyable for others who are less excited about game.
I've never heard of the milk idea. Do you know what the premise? Will have to try it.

Your post made me remember a trip to an archery tournament I attended in western Montana. Fred, a friend of mine, and myself went anticipating a good shoot and some friendship with like minded people. We found ourselves in a big teepee (about a 20 foot base diameter) with a bunch of folks that loved archery as much or more than we did after the shoot. There was a campfire in the middle of the teepee with a grate on it. On the grate was a giant (maybe 16") skillet with about 20-30 Elk Back Strap coins sauteing in butter. We all had old time pickle forks and could help ourselves to the meat as desired. A pickle fork is about 12-16 inches long and is made of forged cast iron with only two tines. The only thing that could of made that taste better would have been an ice cold beer. Oh yeah, we had ice cold beer. We also had conversation, friendship, an awesome meal and great lies shared among friends.
Some memories are better than others. That one is one of my best.

Oh wow BentRod I saw this post/topic. Being an advid hunter I have a freezer full of elk. This sounds delicious[drool] I think I`m gonna cook it up tommorrow night for dinner. Thanks again I`ll let ya know how it turns out.[biggrin]

HUNTING SEASON APPROACHES (guess bow hunting probably already started)! Ah if only I hunted LOL. Always loved deer and elk but only had it when the neighbors growing up had enough to want to hand it out. The stuff they gave us always tasted awesome. Maybe it was kinda like when I hand smoked slamon out to the masses that don't fish LOL. What ya don't know? I hear lots of people mention gmainess but don't ever recall getting stuck with that flavor luckily.

This is an awesome recipe! When I cook wild game for the timid I do something like this. If I'm lucky enough to have a few morel mushrooms in the freezer too, I'll saute them up in a red wine and stuff the loin before I wrap it in bacon.
