Razor clam recipes??

Just returned from the coast with a couple of limits of razor clams. I have my favorite clam/crab/corn chowder recipe in the wings. I was wondering if anyone else out there has a favorite way to use razor clams? I would like to do some simple breaded and deep fried clam chunks. Probably go with a corn meal breading b4 the deep fryer.

my fav breading mix is ..saltine cracker crumbs, lil (or a lil more) garlic powder,
lil seasoning salt(careful there's salt already from the crackers)fine ground blk pepper, even some Italian herb mix if'n i'm in the mood....dip 'em in egg wash(twice as much milk as egg) throw 'em in crumbs,you can shake 'em off or pat it on, or even dbbl dip 'n crumb, depending how much crust you like....works great on bass/perch/catfish fillets too...DOG

ps...i tried run'n them through the cube
steaker a few times..still purtty tough <shrugs>

Best breading is Japanese Honey Panko, kills bread crumbs.

Typically I'll separate the diggers and bodies. Diggers I'll stir fry with Ginger, green onions and a little soy sauce. The digger is the best part of the clam, very tender.

The body is what I pan fry. I'll soak it in milk, cover it with any fish fry, then dip in egg, and then cover with Japanese Honey Panko. After pan frying squeeze some lemon and dip in shrimp cocktail sauce. Good stuff!

Theres a good WDFW clam chowder recipe in the following. We modify it a little bit, instead of 2 cups of water, we put 1 cup of heavy milk and a 1 cup water.

Clam fritters are awesome, at least the ones I've tasted from other guys. I tried it once and screwed it up.

pan frying them after dipping in egg wash and dredging in a flour/spice mixture is also a good way to go. For the dredge I use a mixutre of flour, cajun seasoning (Tony Chachere More Spice is my personal favorite right now), a little fresh ground black pepper, sea salt and garlic powder. Nothing fancy, but still quite good.

A cup of flour and a cup of pyramid hefeweizen, a dash of salt and a dash of old bay makes for a delicious deep fried goodness. drip some lemon on it and dip it in homemade tartar sauce. That and homade chowder is the best use for them. Razor clams are delicious, I wis that I could make it out to th coast to get mine, but that's an awful long way from here.
