I just finished my pickled fall beets. 12 quarts and 3 pints of fall beets. Fall beets are darker and crunchier then the early summer beets.
On the same day I made my first batch of applesauce.1 gallon worth put up in pint containers then frozen.
Next is brussel sprouts and 1 more batch of applesauce then Im done with pickling and canning for the year.

They sound so good you wanna sell me one those home made pickled beets. I love um..also working in Genesee park so I'm close.

I didn't get a chance to pickle beets this year, but did get a case of garlic dills, a few jars of sweet pickles, some Brussels sprouts, and a few jars of corn relish.

Beets like Asparagus are alot of work. With washing,boiling or blanching then peeling . There is extra work to make beets.

Brussels sprouts are similar, as they require washing, blanching, and peeling. But it is worth the effort, as all my family and friends just love them.
