Poor quality sockeye meat ok for smoker?

So I went to Lake Wenatchee this weekend, and ended up with 2 out of 3 fish being very poor quality looking flesh. One had the standard red flesh, but the other 2 were a sort of grey/milky flesh with one being have red, and half lighter color like clouds. Are these fish going to be ok for the smoker? or did I catch some great Crab bait?

No offense but sounds like crab bait to me. If it's not at least pink then it's probably not worth the time to smoke it!
