Questions on Smoked Snappin turtle

Who's here is from the south?
I've never seen or heard of it done and guessing it's for a reason. We eat it as table fair all the time but haven't attempted to smoke any.
Do any of y'all think it is a possible challenge?
People down here Can every type of fish most wouldn't consider eating (Crap, suckers, fall fish, ect.. )
I'm worried about the amount of oil/ fat content as I remember there isn't much.
It's deffinatly a goal for this spring/ summer if I can find time between all the good fishing, Mushroom hunting, and gobblers. Tight lines y'all.

Lived in nc for a few years and those snapping turtles stink terribly lol. I wouldn't consider eating one myself.
