DogFish Shark A hidden Gem ...Whats your take?

Link to a 2011 report. A friend of mine put a lot of time into researching how to dismantle a dogfish via a filet knife, cooking, etc.

I have been meaning to keep one and try cooling it up but never have. All the foofoo you have to go through in the recipes I have seen to get them to taste good just seems like too much trouble.

When I tried it years ago, I used "The Dogfish Cookbook". I thought they did not have any taste at all. It was like eating breading over nothing.

I used to sell millions of pounds of them to European buyers. They just eat 'em up. For me they're absolutely disgusting. They do not have kidneys of any sort, they filter blood and excrete their waste through their muscles and skin. You could not pay me to eat one.

Dogfish Stew Recipe:
1 med Dogfish
2 pounds stew beef
2 tablespoons vegetable oil
2 cups water
1 tablespoon Worcestershire sauce
1 clove garlic, peeled
1 or 2 bay leaves
1 medium onion, sliced
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon pepper
1/2 teaspoon paprika
Dash ground allspice or ground cloves
3 large carrots, sliced
3 ribs celery, chopped
2 tablespoons cornstarch
Brown beef meat in hot oil. Add water, Worcestershire sauce, garlic, bay leaves, onion, salt, sugar, pepper, paprika, and allspice. Cover and simmer 1 1/2 hours. Remove bay leaves and garlic clove. Add carrots and celery. Cover and cook 30 to 40 minutes longer. To thicken gravy, remove 2 cups hot liquid. Using a separate bowl, combine 1/4 cup water and cornstarch until smooth. Mix with a little hot liquid and return mixture to pot. Stir and cook until bubbly.
Serve into large bowl
Throw the dogfish away and enjoy!

I've heard that English fish an chips is all dogfish. Makes sense considering everything else the Brits eat is just warmed over garbage. For the Brits no taste buds goes along with bad teeth!

I think that the state should have a commercial fishery for dogfish. The prized delicacy of Shark fins oversea's, brings in a lot of money globally. Allowing fishermen to harvest these fish would help with over population; allowing more bait fish and then in return, larger fish to re populate the area. Plus it adds some added income to the community.

There is no real need to eat them. I have done it many times. You HAVE to kill and clean that at once. Do NOT let them sit, this is when they release the urine. You have seen their livers. HUGE. Kill, Fillet, and keep on ice. You wont be able to tell them apart from Cod

This is a horrible idea. Let's not promote more commercial fisheries in our home waters! What do you catch when you are catching dogfish (accidentally)? Everything else! I'm not sure about right now but there was a commercial fishery for years. I can only hope it has been shut down. That's how I commercially bought them and sold them over seas. They're still disgusting and I still don't think we need any population control on the cleanup crew. Oh and BTW, I believe they like the fins from the larger sharks which I also sold overseas. Marlin, Spearfish, Butterfly Kings, Sailfish, Tunas and Sharks also anything else that would bite a baited hook.Matt wrote:This is a horrible idea. PS has much to fragile a ecosystem to have any sort of commercial fishery. Take a look a SF Bay and multiply times 10........

I caught a pretty good sized one in the Port Washington Narrows some years back, which weighed about 17 pounds or so, and it put up a spirited fight, unlike most of the little ones I have caught, which really didn't fight at all. I got it on ice and cleaned it pretty quickly, and soaked it overnight in some concoction. I fried it up but it was pretty tasteless. I was told by a marine biologist at the UW that to get that big it was probably over 40 years old. I would do catch and release on any big ones that I caught in the future as it seems a shame to me to terminate the career of such a slow growing fish for some sub-par fish and chips. And, I absolutely agree that a commercial fishery for them would be a big mistake due to the incidental catch problem. We have already lost the ability to catch and retain rockfish, and cod--no point in making it worse.

Just being curious I searched Dogfish. There is an article back in 2005 talking about a decrease in Dogfish in Puget Sound due to increased coml fishing. But still not exactly scarce with an estimated 1.7 million of the things in Puget Sound back then. I did hear rumors once that fish cops have given out tickets for whacking dogfish, wasting a resource I guess.

You May Not Intentionally waste fish or shellfish. This includes
mutilating or clipping fins and then returning to
the water any live fish (such as DOGFISH).

As a little kid I saw many dogfish take screwdrivers and fillet knifes to the head. It was pretty normal from what I can remember for salmon fisherman to dispatch them. Not so much anymore though.
