Walleye Cooking?

Ritz crackers.

I make a ccokie sheet out of foil and put that on the bbq. Then take pieces of your walleye run them through some egg and milk. (ooops first take some ritz crackers and through them in a freezer and break them all up). Then put your walleye in the bag, then on the grill.

one of my favorites is to make a pan using aluminum foil just the length of your fillets. rub sea salt, melt some butter and pour over fillets. Squeeze a lemon over the fillets and season with pepper and as much cayenne pepper as you can handle,or less. Slice a medium sized onion into rings and put over the top of fillets, covering them. Slice some mushrooms and border the fish. cover top with another sheet of foil and place on bbq. Cook until fillets flace and then poke a couple of holes in foil to let juices drain out. cook uncovered for a few minutes to firm fish and serve with white rice, vegetables and your favorite beverage. Real easy to prepare and very delicious.

Oh yeah, you know what I am talkin about panfisher. I dont think I have had walleye any other way, and crappie is good this way too.

Oh yeah, the flour, milk, egg and crackers are definetly a favorite. I like using corn meal, and try crushing corn flakes and dipping your fish in that too. We cook a lot of fish with those kind of breading. An old timer told me one time to use a 1/4 teaspoon of corn starch and that really keeps the breading on and the oil clean. The recipe I posted earlier was a different way of enjoying a tender delicious fish.

Along with the Ritz, try crushing up some cashews. Thats pretty good as well

Ritz crackers?? can't say i've ever heard of that!! I suppose the buttery flavor...i'll have to give it a try.

my personal favorite: oil fried with a Shore Lunch and straight egg batter. The key...make sure the fillets are dry, dip in whipped eggs, coat with Shore Lunch original flavor, then DOUBLE DIP back in the whipped eggs, and DOUBLE COAT with Shore Lunch. Make sure that oil is almost smoking, but not quite. if it is, it's to hot. Make sure oil is half as deep as the fillets are thick. throw them babies in for 3-4 minutes, flip, couple more minutes. When golden brown...enjoy them moist fluffy walleye fillets. This is a great way to cook walleye, crappie, perch for people who "don't like fish", it really eliminates a lot of the fishy taste some people don't like. give it a try..

Hey Rolland you definately have to try the ritz! I use ritz and seasoning on bass, crappie and catfish... haven't cooked walleye... yet, oh but I will!

One trick that I like to use (and learned from watching cooking shows) is to marinate the fillets in whole milk over night. What that does is actually fluff up the flesh and it helps to leech out any silt from between the flakes. For breading I just use Jiffy corn meal muffin mix. I'll have to try the Ritz crackers though.

I have heard that freezing your fillets in a ziplock bag with milk makes them taste fresh later. Does anyone do this? I usually just use water if I freeze them.

hey Gone Fishin, i sure will. Oh by the way, that sure is a nice smallie i saw of yours from last june (the 19"er), nice work on that and a great photo. Also have not heard of the milk thing, but i am intrigued. I will do more research, and yeah, i usually just use water to freeze fillets also, unless i have a vacuum sealer. If you need people to fill up that trip kevinb, let me know.....have boat.....will travel. (although it's not fancy)
