Simple and amazing trout
I filleted 3 trout yesterday and buttered a couple frying pans. After melting the butter I added ALPINE TOUCH spice which you can buy online from the company, located in Montana. I slow cooked these fillets until done and OMG they were amazing! They were the best trout I have ever eaten bar none. The spice is inexpensive; in fact shipping costs more than the price of the spice. It is a great spice which is not in stores here in WA to the best of my knowledge. This spice is also great on burgers, chicken ECT and in the future I will definitely cook cod and halibut using it. The web site is http://www.alpinetouch.com . Great stuff. Enjoy.

Thanks Dave, I just ordered some and I thought the Jerky seasoning sounded good so I ordered that too. And who does not like a good salsa, so I ordered the sample of the salsa spice, too.
All that and my total after shipping was less than $20.

That alpine spice is really good stuff, funny you should bring that up. I work at a meat shop in Yakima, and one of our loyal customers swears by that stuff, so she purchased a case of it, and brought it to all of the guys at the shop to try. Amazing! I've got the jar sitting on my stove.

Beerman, That’s too cool. It’s definitely good stuff. KTK, I'll bet it will be great on halibut and lings. It was just great the other day when I cooked the trout fillets in butter with the seasoning. I was careful not to cook them too hot as the butter will burn if the heat is to high. Panfisher, you are so right about using the spice on burgers. I also use it on ground turkey to make burgers. I mix the Alpine Spice and worcestershire sauce into the ground turkey and leave it in the refrigerator for several hours before grilling them up as burgers. Makes turkey burgers taste like beef. It’s great to hear what others are cookin.

Ingredients:
Salt, Onion, Monosodium Glutamate, Garlic, Pepper
not very fond of MSG myself
my favorite seasonings come from Garlic Gourmet over in Ariel, WA. I might order some of their honey lime rub for fish. I always restock when they are at the Spokane fair.

You are correct. The Alpine Spice is very basic and it is also mild. I also didn't realize the Alpine Spice had MSG in it which I would rather do without as well. Thanks for that info. It just went amazingly well with the filleted trout. My guess is you could use any seasonings you like. I think filleting the fish allowed the butter and seasonings to really penetrate the fish itself as opposed to seasoning the skin on a whole trout and frying or baking. If you fry these fillets in butter, the butter can burn if the heat is too high, so medium or lower is recommended. Good luck.

Garlic Gourmet products are very good indeed.Usually with any fish recipe I do I use "OLD BAY".Comes in a yellow metal can.I dont mind MSG if its the last thing on the ingredients.
When youre up to your rear end in alligators,its hard to remember that the initial plan was to drain the swamp.

I too wouldn't worry to much about MSG,as long as your not using it on a daily basis.

I cooked 2 trout last night, caught on a trip I took a few weeks ago, same method I originally posted. They were again great. When I ordered the Alpine Spice, I did see the less sodium product they offered but opted for the one with salt thinking I wouldn’t have to add salt then. I like that the Alpine Spice is mild.
I also mix the Alpine Spice into ground turkey along with Worcestershire sauce made by a company called Crystal out of New Orleans, LA. Crystal makes the famous Hot Sauce, used exclusively by Chef Emeril Lagasse on his Food Network shows. I grill the turkey burgers up on the gas BBQ and they are absolutely great with less fat than the leanest ground beef. An 8 ounce grilled turkey patty is only 300 calories compared to an 8 ounce 7% lean grilled ground beef patty which is 640 calories. The Turkey burgers taste almost identical to a regular ground beef burger when Worcestershire and some seasonings are added to it and allowed to bind in the fridge overnight. Gotta like ground turkey.
By the way; I mentioned the Crystal Hot Sauce and Worcestershire sauce. Their Worcestershire sauce is great and if you like hot sauce, you might consider trying Crystal. It is in my opinion one of the best hot sauces I have tasted and I have tasted several. Years ago Haggen sold Crystal Hot Sauce but now I can't find it anywhere so I order it online from a company in New Orleans called Baumer foods, https://www.baumerfoods.com/ . It's inexpensive and the “extra hot” is just right and actually has flavor unlike so many hot sauces that are just plain hot. A hot sauce with flavor, what a concept.

Is that stuff like Johnny's Seasoning Salt? I use that with about any meat and it works wonders with fish...but I'm always looking to try new things when it comes to cooking up fish....

A gal in the Records section at my work told me about the Alpine Spice after she brought in some of her husband’s smoked salmon which was surprisingly great. So I went to the Alpine Spice web page and ordered some. The Alpine Spice is good but I definitely haven’t retired the Johnny’s and never will. In fact I think I still like the Johnny’s the best but on the trout cooked as I mentioned, the Alpine was the prefect match. I said above that I mix the Alpine with ground turkey. I didn’t mention that I also use Johnny’s in ground turkey as well. I left out the Johnny’s part because initially I brought up the Alpine Spice so I tried not to stray from it. For me the Johnny’s is likely the best seasoning I’ve ever used as far as all around seasonings go. Good stuff. Here are a few pics. One of the two seasonings we talked about, the other is the Crystal products I mentioned.
