I need a CRAZY kick butt chili recipe
Calling all cooks, i.e. "Racfish" where ya at?
I love to cook, and try unusual recipes. I'm looking for a great chili recipe. If you can send me a link to something you like, please do. I would love to see a Caribbean (sp?) style chili, or something way off the beaten path.

Kick butt or butt burn?
couple pounds of sliced flank steak, cubed. Couple large onions, diced. 1/2 doze japalenos and another half doz anchoes. Coupel large cloves of garlic. Cans of diced tomatoes to cover and simmer. Spice with ground cumin and oregano (mexican of course) then salt and pepper to taste
Brown meat, saute onions and garlic. add diced peppers. cover with tomatoes and simmer for a couple hours on very low heat.
If you like traditional chili add a bunch of New Mex red dried chili or chipotles to taste and if you want beans add the kind of beans you like, drained of course. Sometime I add corn and when I do it I add a couple small cans of pintos and black beans. No kidneys, big red beand in the pot don't make it.

Beans. Ew. But double up on that garlic, a couple of cloves just doesn't cut it! Lots of cumin, a little chili pepper, and a dose of tabasco. The rest like Bodo says. And cook it for a long time, really slow. I put it in the slow cooker in the AM and eat it in the PM. Just made a big pot.

If you're looking for a good seasoning for it, try Broussards spicy creole seasoning. I dump about two tablespoons in my chile, and haven't been able to figure out what they put in it but it makes awesome chile. That and a bunch of garlic is all you need to make it perfect. No beans though. We just had chile dogs with leftovers today, and man, it was the best chile dog you could ever have. With real hotdogs, none of this 100% beef nonsense.

You knew I had to write something. I dont have a real kick ass chili recipe but I had a chilli once with salmon in it. Made the same as a beef/pork only no need to brown the salmon. Any fish would work. I chose salmon cuz its the easiest to pin bone for me. If not using salmon Id use a beef/pork mixture of meat. Bear meat works well with pork also.

It's cheating I know, but in a pinch just go pick up the little bag of "Ass Kickin Chili fixins" http://www.asskickin.com/product/ass-ki ... ili-fixins, take a roast, cube it up and brown the cubes in a skillet, throw them, tomatos, onions in a slow cooker with the contents of the bag. Add the little packet of powdered habanero (if you use the whole packet, you better have some corn bread and milk at the ready ) and slow cook it for 8-10 hours.
Oh, and don't accidently inhale the dust that floats up when opening the packet of powdered habanero, it'll give you a nose bleed (I know this from experience)
