It was another Out-standing Fishing Adventures this morning with the beautiful sunrise and oh ya The catching was out of this world.
We targeted Mack Bar today to have a banner 10 fish day with the Big fish tipping the scale at 9 lbs. 6 oz.
The Ace Hi-Fly did it again for me.. I found fish all around the Bar. I kept my presentation within 3ft. of the bottom to just bang um today..

That's a haul of fish there, so what do you do with them. Are they smokers or what ? I've always wondered that.

Well they are great smoked but most are good anyway you wanna cook them..I really enjoy eating these fish pan fried or baked..Laketrout have had a bad name because they have a fat layer in them along the rib cage and if not taken out they are not as appealing...I have a Baking recipe that I use alot..I call it Alaskan Baked Potato..Check it out on my website www.lakechelanadventures.com under the recipe section...Thanks so much for the questions..

Nice looking fish Joe, and what a weekend of catching you've had. Hey Joe, I'd second the comment on removing the Brown fat layer to improve the flavor of the Macks. I always remove the skin while I'm filleting whether for the grill or the smoker. A good sharp knife makes the job easier. Keep the reports comming.

If you smoke them do you brine them the same as salmon or steelhead, also wondering if you smoke them til well done (like kippered) if they are as good as if undersmoked and still a bit soft? I am asking because I would like to try the fishery out over there, and prefer smoked and / or kippered fish to grilled or baked. Looked like a beautiful day out there on Chelan!

I do smoke them like Salmon..I use a dry brine.. you will like these fish smoked...
