That big guy is headed for the smoker, stevenksullivan; I like to put my trout in the smoker or BBQ (no foil) on a Weber Grill opposite to the coals with moist apple chips for a smokey flavor. I coat the fish with olive oil and spray oil the grill; thus, no need for foil.
