The wife and I headed to Copalis beach the day before Easter for our last spring razor clam dig. The weather wasn't bad despite being a little chilly. We found some nice size clams out there. Took them home and tried clam cakes for the first time. They were good but I think the fried clam is better. My wife liked the clam cakes better and she doesn't usually eat the clams so I will be making this dish again. We also found they were pretty good dipped in some chipotle mayo!
