Bass Recipes

Does anyone have any good recipes for bass? I caught a 7lber today and ate one of the fillets on the BBQ but it wasn't very tasty. How should I eat the other half? Fry it maybe?

A 7 pounder is old, the meat won't be as good as a small young fish. So we let them go so they can continue with their genes for a better fishery.

If you are going to keep a large bass, treat it as you would any rockfish you'd catch out in the salt. My preference would be to fillet it, cut the fillets into manageable pieces, bread them and either pan or and deep fry.

With bigger (older) Warm water fish I use to let them soak in a lite salt brine in the fridge over night. It helps get rid of the blood in the tissue which is what gives that off taste. There are many good reasons to let those monsters go but If a person decides to take them home you should be prepared to know how to prep them to eat.

Try pan fry in fillets in a little olive oil after dredging the fillets in a little flour, onion or garlic salt,cayenne pepper and seasoning salt. I like sautéing a tomato and a chopped Serrano or jalapeno pepper, some mushrooms, and a little onion seasoned will ground cumin, garlic salt and salt and pepper then pouring it over the fish. Really good with panfish or bass.

treat them like you would a large old catfish, either soak in light salt water brine or buttermilk over night. Takes away the old muddy iron taste.
