Winter Fishing the Keys

If a person were thinking ahead... and planning a dec-jan trip to a place more sunny than Seattle, what are the fishortunities that time of year? is there good fishing to be had dec-jan in the keys-gulf regions? seems like an ideal place to escape for a week during our darkest time of year up here.
